Crosta: significant and smooth, yellow in colour
Pasta: light straw-yellow in colour, friable, with few holes, melting on the palate yet the crystals of Tyrosine can be felt
Profumo: pleasant and persistent of beeswax, of honey and of vanilla, toasted notes
Sapore: savoury, slightly sweet: scents of beeswax and honey make the spicy hints of the aged cheese to be felt as milder
Stagionatura: 7 - 12 months

Available from May 2020. This cheese is characterised by great harmony within the taste, round and very persistent on the palate
