Slightly ripened, soft,
mild but flavoursome. Can be eaten fresh or allowed to mature over
a period of months, in which case it will take on a distinct and
slightly piquant taste. Any mould appearing on the surface is an
indication of genuine quality, and can be washed off with water,
using a brush.
